The Key West Shrimp Melt is a recipe Shelley got from the Bleu Heaven Restaurant in Key West. Shrimp are sauteed in white wine and butter and combined with melted sharp white cheddar, lettuce, tomato and a key lime crema. Shelley also recommends that you dip those sweet potato chips into the crema.

Grilled Shrimp Tacos normally come with black beans and cilantro rice, but on food truck days like this past Saturday at Crestwood Court, they go with chips on the side for everything.

The key lime pie can be prepared in the truck's convection oven but sometimes they are made beforehand at the shared commissary at St. Patrick's Center.
