Harry and Agnes Karagiannis have operated Spiro's in Chesterfield (the Karagiannis family empire includes another Spiro's in St. Charles, as well as various steak houses) since the early 1980s. The authentic Greek cuisine and hallmark exemplary service have reeled in regulars over the years. The result is an interesting amalgam of neighborhood eatery, fine dining and family tradition. A typical meal can start with an appetizer of saganaki, the traditional battered and fried kasseri cheese (or chunks of fabulous feta and olives drizzled with balsamic vinegar), followed by a wide selection of Greek entrées. (The lamb shank may be the best around; ditto the souvlaki.) Spiro's offers desserts galore — but why even go if you're not intending to finish with the homemade baklava?
