Hacienda Mexican Restaurant to Open Fast-Casual Spinoff Called Wet Burrito

A former Quizno's shop in Clayton will get new life this spring as a burrito concept.


The owners of Hacienda Mexican Restaurant, which has served St. Louis for 38 years at its location on Manchester in Rock Hill, announced today they will open a faster, less expensive outpost called Wet Burrito at 7810 Forsyth. The fast-casual eatery will be in good (quick) company — there's a Sauce on the Side located right next door. SPACE Architecture + Design is doing the revamp.


In a press release, owner Alex Rodriguez de Torrez said the 1,500-square-foot Wet Burrito would be "a new and different way" to offer some of the restaurant's favorite recipes.

According to the release,

Hoping to cater to the busy Clayton business lunch crowd, owners say they will be able to serve virtually every customer from start to finish in less than three minutes. Customers will choose a main entree made with their choice of protein or "calabacitas" (Mexican vegetables) beans, rice and cheese.

Entrees are assembled in front of the customer. Signature items such as the Wet Burrito or Nachos are finished in a specially designed salamander broiler to melt the freshly shredded cheese in less than 30 seconds, while other items such as salads, bowls and street tacos are passed through to the cold finishing station where all entrees are dressed with handmade salsas, garnishes and guacamole. 

Rodriguez de Torrez promises made-from-scratch food, from the guac to the tortillas.
