On cold, rainy days, few things are as comforting as a thick étouffée of shellfish, served with a pile of warm rice. In this particular version, we enjoyed a brown roux studded with thick, bouncy shrimp and crawfish, although it's just as good without a blond roux, and just as good without the shrimp.
