"I talked to the chefs told them to have some fun with it, do something that's highlighting the smoked meats," manager Ed Aller tells us. "They put a lot of creativity into it."
Aller describes the brunch menu as Midwest staples with the Atomic Cowboy spin. For instance, you can get biscuits and gravy with pulled pork topped with chorizo gravy and crumbled bacon. Chef Cesar Correa also added some of his South American recipes from his time at the now-closed restaurant Mirasol, like a tamale stuffed with marinated chicken and topped with ancho-chile mole.
"Cesar really has got a whole stock library in his brain of all the flavors. He has with fun with it," Aller says. He brought on Correa recently to join chef Francisco "Paco" Diaz. Sunday brunch will also include live music (think folksy) and cocktails like iced coffee with Kahlua and Grand Marnier, mimosas and bloody marys with Atomic Cowboy's infused vodkas. Coffee is provided by Kaldi's and doughnuts by Vincent Van Doughnut.
