It may be cold and rainy in Madrid right now, but at Modesto Tapas Bar & Restaurant (5257 Shaw Avenue; 314-772-8272), spring is officially here.
Last Wednesday the Spanish restaurant introduced its new spring and summer menu: It includes tapas dishes as well as "small bites," which will be available during happy hour.
"We've been testing dishes in the kitchen, and we're excited to launch these new items," owner Brendan Marsden says in a press release. "Staying true to the genuine tastes of Spain, we've created some really special additions to the menu."
Gut Check spoke with Marsden about the new menu, which he tries to change twice a year to keep it fresh and seasonal.
"The chef and I get together and we look at what produce is becoming available," Marsden says. "Then we look at the bottom twelve items or the ones that aren't in season any longer and replace those."
About half on Modesto's menu will remain the same, but the new additions created by chef Carlos Hernandez sound pretty tasty. Marsden's favorites are the Buñuelos de Calabacín: zucchini-and-potato fritters with mint and parsley yogurt.
In addition to the new menu items, Modesto is introducing new happy-hour dishes. These are small plates of food that range in price from $0.25 to $2.50 apiece.
"We like to evolve our menu not only to reflect our guests' palates and preferences, but to stay in touch with Spanish influences," says Marsden in the press release. "It's all about continuing the flavorful and sharable essence of the tapas experience."
