#79: Birria at Pueblo Nuevo

I wouldn't blame you for complaining about our recent spate of rainy, cool weather, but it does carry one advantage, a final chance to enjoy hearty soups and stews before the summer heat arrives. Today's weather (and, maybe, a wee bit of a hangover) demanded birria, the traditional Mexican goat stew. You won't find it many places in St. Louis -- in truth, the only place I know of is Pueblo Nuevo in Hazelwood, where it's a specialty of the house.

The stew is fantastic: fork-tender goat meat in a thick, smoky, piquant chile sauce, fiery enough to clear out the cobwebs without swamping any flavors. The goat is gamy, but not overwhelmingly so -- a squeeze of lime gives the meat, and the sauce, a welcome brightness. Birria is served with corn tortillas, but don't stop once they are gone. Spoon up every last drop of that broth.
