Ray Hill's To Open Microbrewery

Ray Hill, CEO/brewer of Ray Hill's, told me today that he'll be opening Ray Hill's Brewhouse on New Florissant Road in Ferguson this summer. The 7,700-square-foot, fifteen-barrel microbrewery takes over a space previously occupied by a St. John's Liquor store, and is about a mile up the road from UMSL.

Until recently Anheuser-Busch brewed one pilsner for Hill, his only beer on the market, which has been available since 2007 at area grocery stores and a few restaurants (Pujols 5 Westport Grill, Kitchen K, Cicero's). But the new brewhouse allows Hill to do all his own brewing, and add to the mix. He says he'll be pouring six new styles of beer -- porters, stouts, pale ales. Hill says the brewhouse will also serve food. (Chef yet to be named.)

"It'll be a destination," says Hill. "I'm really proud of it."

Gut Check will be sure to let you know when the microbrewery opens.
