After sitting empty for most of the past year, the former Café Balaban space at 405 North Euclid Avenue will open tomorrow night as Herbie's Vintage 72, a tribute to Herbie Balaban, the late founder of Café Balaban.
Herbie's is owned by Monarch partners Aaron Teitelbaum and Jeff Orbin. Teitelbaum will oversee the kitchen for the first two months. The dining room and bistro menus (links PDF) feature several throwbacks to the original Café Balaban, including the famed cucumber bisque and beef Wellington.
When I spoke with Teitelbaum by phone this afternoon, he acknowledged that Herbie's retro approach is potentially tricky, as fans of the original restaurant might remember its dishes as being better than they were. But he said the response during the restaurant's soft opening has been great.
