Adobe Reds in Midtown

I order my stacked enchiladas Christmas-style and with the fried egg. For the meat I choose pork, which is smoked over pecanwood, another hallmark of New Mexican cuisine. It's a colorful dish: The egg yolk quivering atop the enchiladas is a shade that's closer to orange than yellow, and both the red and green chile sauces, each poured over one half of the enchiladas, are vibrant. Red's Stacked Enchilada is four layers of corn tortillas with your choice of grilled chicken, shredded beef or smoked pork, served with adobe sauce or green chile. It is then topped with Red's melted cheese blend, and for a dollar more, a fried egg.

One of the house specialties listed on the menu is the fish, shrimp or crab cake soft tacos. They come served with Red's cheese blend, shredded cabbage, pico and cilantro lime cream.

The Shrimp Flatbread, one of the appetizers on the menu, is southwest spiced shrimp with pecan cilantro pesto, roasted garlic and cheese blend on grilled flatbread.

Also from the appetizer list comes three different types of quesadilla. You can get the grilled portabella, chicken, or shrimp quesadilla. They all come with mango salsa on the side.
